Thanks to her, and Wikipedia, I can tell you what happens to an assortment of characters.
- Harry becomes an Auror for the Ministry, and is later appointed head of the department. He keeps Sirius's motorbike (which Arthur Weasley repaired for him), but can no longer speak Parseltounge after Voldermort's soul inside him was destroyed.
- Ginny Weasley plays for the Holyhead Harpies Quidditch team for a while and then leaves to be a stay-at-home mom. She then becomes lead Quidditch correspondent for the Daily Prophet.
- Ron Weasley starts out working at Weasleys' Wizard Wheezes, then joins Harry as an Auror.
- Hermione finds her parents and removes the memory modification charm she placed on them. She first works for the Ministry in the Department for the Regulation and Control of Magical Creatures, greatly improving life for house elves. She then moves to assist eradicating oppressive, pro-pureblood laws in the Department of Magical Law Enforcement.
- George Weasley continues his joke shop and names his first child Fred, in honour of...Fred.
- Luna Lovegood travels around the world seeking out odd creatures. She finally marries Rolf, grandson of the famous Newt Scamander. The Quibbler returns to its usual condition of advanced lunacy.
- Firenze is welcomed back into the herd.
- Dolores Umbridge is imprisoned for crimes against Muggle-borns.
What about events after Hogwarts?
- Kingsley Shacklebolt is Minister for Magic, while Percy Weasley works under him as a high official. Kingsley banishes Dementors from Azkaban, and our favourite trio help him reform the Ministry.
- Slytherin has become more diluted blood-wise but still retains its dark reputation.
- Voldemort's jinx on the DADA position breaks with his death.
- Snapes potrait does not appear in the Headmaster's office, but Harry intends to lobby for its addition and tells the world the truth about his sacrifice.
